There’s something about early spring that makes you want to dig your hands into the soil, whether it’s planting seeds in the garden or, in our case, making cupcakes that look like they came straight from it.
On a gray, misty afternoon, my son and I decided to bring a little bit of garden magic into the kitchen. We whipped up a batch of rich chocolate cupcakes, crushed some Oreos to make the “dirt,” and tucked in fresh mint sprigs so it looked like tiny plants were growing right out of them. The best part? Watching his eyes light up as he gently “planted” each little mint leaf like it was the most important seed in the world.
