What You’ll Need (just enough for a small batch):
- 12 ladyfingers (the crunchy kind)
- 1/2 cup heavy cream (cold)

- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup warm milk
- 1 tsp matcha powder
- 1–2 tsp honey (optional)

Tips & Tricks Before You Start:
I like to chill it for at least 2–3 hours before serving, but it’s honestly still delicious if you can’t wait.
Don’t soak the ladyfingers too long — just a quick dip in the matcha so they don’t fall apart.
Use cold cream so it whips up nicely. I pop mine in the freezer for a few minutes beforehand.
If you don’t have mascarpone, a mix of cream cheese + a little heavy cream works great.

How to Make It:

- Assemble: Dip ladyfingers quickly in the matcha and layer half in your dish. Add half the cream. Repeat with the rest of the ladyfingers and cream.
- Top it off: Dust with matcha powder and pile on those juicy raspberries. Chill if you can. Eat with a small spoon and no guilt.
