I had never thought about putting blueberries in a grilled cheese before. It sounds a little strange at first, but the more I thought about it, the more I could see how it might actually be really good. We eat cheese with fruit all the time, after all.
So I decided I wanted to make my own version.
I knew I wanted to use Brie because it’s creamy and mild and melts beautifully, and sourdough seemed like the perfect bread to go with it. For the blueberries, I cooked them just long enough to make them soft and jammy, with a little honey and lemon. And it turned out to be such a lovely combination.

The blueberries are sweet and a little tart, the Brie is warm and creamy, and the sourdough gets all buttery and crisp around the edges. It’s one of those simple things that feels a little more special than the amount of effort it takes to make it.
It also feels like such a summer lunch to me. This is the time of year when I always seem to have blueberries in the house. I buy them for one thing and then find myself eating handfuls straight from the container every time I open the refrigerator.
I love blueberry muffins and pancakes as much as anyone, but I also love finding different ways to use whatever is in season. And this is definitely a different way to use blueberries.

A Few Little Notes
I used sourdough because I love the slight tanginess with the sweet blueberries, but any good, sturdy country bread would work.
You could also try this with goat cheese if you like a stronger flavor, although it won’t melt quite as much as the Brie. I think a mixture of Brie and mozzarella could be really good too.
And now, of course, I’m thinking about all the other fruits you could put in a grilled cheese.
Blackberries with Brie. Peaches with mozzarella. Apples with sharp cheddar in the fall. Maybe this will become a whole thing. For now, though, I’m sticking with the blueberries.

It’s warm and melty and a little messy, and somehow the blueberries don’t feel strange in a grilled cheese at all.
They feel like they were supposed to be there.
